Gala Estate White Label Pinot Gris 2023 cremant-de-bourgogne lime and clayFruit was destemmed and allowed to soak on skins for 12 hours before pressing to tank for settling. Vineyard parcels were fermented with carefully selected yeasts to promote complex aromatic and a luscious mouthfeel. matured on lees for 5 months to build texture and length.
